Shakshuka - the perfect breakfast, lunch or dinner.
Quinoa, Pea, Mint and Feta Fritters - there is SO much flavour and freshness in these little fritters.
Dhal - the ultimate vegetarian meal. A great one for a cold night, easy to make and great to freeze.
I know I said three, but one more would the Oat Choc Chip Cookies - the best cookies going around. I have friends whose kids will no longer eat any other chocolate chip cookie!
